Ingredient list:
- Sliced mushrooms about 1/2 cup
- Olive oil
- Hearts of palm “pasta”
- sliced black olives 8
- 1/4 cup pumpkin seeds
- 1/4 cup fresh basil
- dairy free parmesan
- nutritional yeast
- accompaniments – cracked black pepper, black lime and extra virgin olive oil to taste.
Saute mushrooms in olive oil. When ready, add the hearts of palm pasta. I use the box from Trader Joes, which is already cooked. It is so simple and nothing added. Add the olives and pumpkin seeds. When all is hot, gently add the slightly chopped basil. Serve immediately. Top with the parmesan and nutritional yeast.
