
Ingredients:
Crust:
- 1 package Manini’s pizza dough
- Small amount of almond flour
Pie:
- Abbots Meat (your choice-chicken, ground beef or Italian sausage) 1/2 package
- 1/8 package Pumfu chopped into bite sized pieces
- 4 small partially cooked potatoes quartered
- 3 small partially cooked carrots cut about 1 inch lengths
- 3 sliced white mushrooms
- 1-2 cups frozen mixed vegetables consisting of peas, corn, carrots
- 1 tablespoon roasted green chilis
- 2 shisito peppers
- 1/2 teaspoon oregano
Method:
Preheat oven to 400
Use a large enough skillet or pan to cook the pie ingredients. Start with the mushrooms, then add the pumfu, and “meat”. Once partially cooked, add the remaining ingredients. Salt and pepper to taste.
While the above is cooking on low heat, cut the pizza dough in half. Using a baking sheet, roll the dough, using the almond flour to turn it. Use a 12 inch glass pie pan. Spray with olive oil. When the dough is 12 inches, carefully lay it in the bottom. Add the pie ingredients. Roll out the other half of dough and place it on the top.
Bake with a foil lid securely covering the pie for 35 minutes. Uncover and bake an additional 8 minutes or until golden brown.
Serve with olive oil or vegan butter if desired.
