Water Poached Eggs

  • Fresh organic eggs – 2
  • Buttered toast as above

On the stove, heat to boiling in a small sauce pan enough water  with salt to cover the two eggs.  Crack and open the eggs in a bowl.  Reduce the water from a fast to a slow boil.  Pour the eggs in the water.  Cook for 2-3 minutes.  Remove eggs with a slotted spoon and ladle them on your toast, being careful to drain all the water.  Salt and black pepper.  Serve with meat and potatoes as desired.
