Basted Eggs

  • Fresh organic eggs – 2

If using a frying pan, get a lid that fits without any steam escaping.  Or use a skillet with a pie pan.  Heat the pan until medium hot.  Break eggs in a bowl.  Pour without breaking the yoke into the pan or skillet.  Cover the pan to allow the steam produced from the cooking to cook or baste the eggs.  This will depend on the heat of the cooking pan, but usually 2-3 minutes to keep the yoke soft.  Serve with toast, potato, cooked fresh tomato, meat….
