Melts

Probably one of most guys favorite sandwiches if prepared properly.  And most ladies as well.  I include it here, as it seems to be virtually impossible to find a satisfactory grill cheese sandwich at a restaurant.

  • Whole grain wheat berry bread. 2 slices
  • Provolone or other white cheese. 2 slices
  • Butter – cover one side of both slices liberally
  • Olive Oil
  • Cayenne pepper

Heat up a skillet, pour a liberal amount of olive oil in the pan.  Put buttered bread, butter side up in the skillet.  After the olive oil has soaked into the bread and heated it slightly, turn it over and put one slice of your cheese on each of the two bread slices.  Sprinkle with Cayenne and close the sandwich.

Some variations include: tuna melt, tomato melt, patty melt and anything else your imagination might conjure.  For the tuna melt, follow the grill cheese sandwich above and add the tuna sandwich mixture (see recipe) before closing.

Tomato melt would be to add fresh sliced tomatoes to the sandwich before closing.

Patty melt:  add a grilled hamburger or other meat patty and grilled onions before closing.
