Platano Maduro Asado

  • Plantains (Platano) – 2.
  • Butter
  • Sliced cheese – yellow or white.

Asado means baked.  You simply take the yellow or ripe plantains, peel, and bake in a glass  casserole.  Bake on one side for 30 minutes at 375°, turn over and bake an additional 15 minutes.  Take out of the oven, cut length wise without cutting all the way open. Layer slices of your favorite yellow or white cheese.  The hot plantain will melt the cheese nicely.  Serve on the opened skin on a clay plate.  

This simple dish goes great with many accompaniments.  Try with baked eggs and pico de gallo.
