- Bell Peppers – Any color, depending on budget and mood. Green always works. Simply cut out the top stem and carefully wash out the seeds inside.
A nice option to the Spanish Rice dish is to stuff a whole bell pepper with the Spanish rice and bake it until the pepper is done. (Do at least one pepper per person you are serving). Bake it in a 350° oven with a covered glass casserole. A nice dish and very simple. Another variation is to top with cheese which of course will melt. Very impressive but simple.
