Chili

  • 2 quarts meat sauce (from meat sauce recipe earlier)
  • 1 can red kidney beans
  • 1 can chili beans
  • 2-3 green roasted poblano chili’s.  (Be careful and sample the heat before you over do this.  You can always add spicy heat, but it is very tough to remove!)

Combine all ingredients and simmer for at least 30-45 minutes on very low heat.  If possible, refrigerate overnight and heat before serving the next day.  Serve with sweetened mint lemon ice tea (if still flying) or at least one beer.  Other serving suggestions would be corn bread made from a package or garlic bread.  Garlic bread can easily be made from any type of bread or toast.  Just smother it in butter or olive oil and sprinkle garlic powder.  (Not garlic salt).  Either heat it in a frying pan or in foil in the oven.  Both are terrific.  Another great side dish with chili is apple salad.  See recipe.
