Meat Loaf

  • Lean Ground Beef – 1 1/2 pounds
  • Eggs – 2 unbeaten, uncooked
  • Brown Onion – 1/2 cup chopped
  • Green Pepper – 1/4 cup
  • Bread Crumbs – 1/4 cup
  • Oats – 1/4 cup
  • Ketchup – 1/4 cup
  • Sea Salt 1 teaspoon
  • Black Pepper, medium ground – 1/2 teaspoon
  • Garlic Powder –  1/2 teaspoon
  • Liquid Hickory Smoke 1/4 cup (optional)

Preheat oven to 350°F.  Combine all ingredients in and hand mix with a fork.  Put mixture into a 9×6 bread pan.  Shape the meatloaf and cover it with aluminum foil.  Bake for 20 minutes then remove the foil and bake another 15 minutes or until top has a crust.  Be careful to not burn it.  Remove from oven and let rest for 15 minutes.  Remove from baking pan and serve on a large platter.
