Crock-pot Tacos (contributed by Fil Buttierez)

This recipe is very easy and can be also modified to cook with a pressure cooker if you are in a huge hurry.  It is better if you can take the time and plan on cooking it using a crock pot.  It also allows you to use a poor cut of beef that would be otherwise very tough.

  • Beef roast – 8 – 12 pounds
  • Brown onion – 1 sliced
  • cilantro – 6 bunches
  • garlic cloves – 2 peeled and cut in halves
  • beef bouillon cubes – 2
  • garlic powder – 1 teaspoon
  • whole tomatoes – 12 oz can -1

Combine all ingredients into crock pot along with a quart and a half of water.  Set crock pot to medium cook for 8-10 hours.  The longer the cook, the more robust of a taste!
