Fried Rice – hold the rice

Pretty simple really,  simply take the normal ingredients of a good shrimp fried rice and don’t use the rice.

My favorite ingredients:

green squash or zucchini (whats the difference?) – 5, quartered

small okra – 1/2 cup

mixed (frozen) vegetables – 2 cups

bell pepper, 1/2 strips – 1

shrimp – (deveined and peeled) – 1 cup or so

optional – egg – 1

Falafel – 2

Fry above ingredients in ghee or avocado oil.  Hold the egg until all are cooked.  Add Arabian spices.  Make a small well and break two eggs in the middle of the pan, slightly scramble.

Should serve 2-4.
