- 4 cooked baked potatoes. (I try and stay away from potatoes, but heck, they are so so good. I usually will keep 6 or so cooked in the fridge for potato salad or good old fashioned America Fries or Hash Browns. Normally, whenever I have the oven going for something, I will wrap a potato in foil, first adding a small amount of olive oil, natural brown sugar and sea salt. Leave them in the foil in the fridge until needed. No more than 6 or 8 weeks. I mean days.)
- 1 onion – chopped fine
- 1 hard boiled egg
- mayonnaise or olive oil
- Poupon mustard
- salt and pepper to taste
Cube the potatoes and chop the eggs. Combine with oil or mayo, Poupon mustard, salt and pepper. Some people like to also add either dill or sweet pickle relish. Mix it up and experiment. Of course you can buy this pre made for a small price. But it usually comes with tons of MSG and additives and nothing is so nice as a good home made potato salad with a Red Hot Sub.
