Black Rice Pasta with Shrimp Gourmet Feast

Basic ingredients:

  • 1 pound cooked shrimp
  • 3 ripe whole tomatoes – cored and cut into large bite sized pieces
  • 2 cloves garlic – sliced
  • 4 green or yellow squash – quartered into bite size pieces
  • 1/2 cup sliced green or black olives
  • 1/8 pound cubed Haloumi cheese
  • 4 pieces of falafel
  • 1/8 cup slivered almonds
  • 1 chili sliced lengthwise
  • 2 tbsp oregano
  • 1 tbsp italian spice
  • olive oil
  • parmesan cheese grated – to taste
  • crushed red pepper – to taste
  • 250 g wholegrain black rice pasta – cooked with sea salt

In a large ceramic skillet, brown garlic and squash in olive oil. Add all other ingredients and cover with lid. The dish is ready when the tomatoes are soft. Serve over cooked pasta and garnish with parmesan and red pepper as desire.
