- Apples – 3 (I prefer green Macintosh apples)
- Dates – 4 (remove seed and cut into small chunks)
- Celery – 1 stalk (cut into small pieces)
- Carrot – 1 grated
- Raisins – 1/3 cup
- Salted peanuts – 1/2 cup
- Greek plain yogurt – 4 ounces
- Cream cheese – 1/3 cup
- Mayonnaise – 1/3 cup
- Lemon juice – 1 teaspoon
Core the apples and then cut into small bite sized pieces. Mix all ingredients in a bowl. Serve with any type of meat or fish dish, or add a broken peanut butter cookie (see recipe in this blog) and serve with coffee as a dessert.
