Apple Date Salad


  • Apples – 3 (I prefer green Macintosh apples)
  • Dates – 4 (remove seed and cut into small chunks)
  • Celery – 1 stalk (cut into small pieces)
  • Carrot – 1 grated
  • Raisins – 1/3 cup
  • Salted peanuts – 1/2 cup
  • Greek plain yogurt – 4 ounces
  • Cream cheese – 1/3 cup
  • Mayonnaise – 1/3 cup
  • Lemon juice – 1 teaspoon

Core the apples and then cut into small bite sized pieces.  Mix all ingredients in a bowl.  Serve with any type of meat  or fish dish, or add a broken peanut butter cookie (see recipe in this blog) and serve with coffee as a dessert.
