This is great recipe for someone who has a taste for the flavor of an Arepa. Either use left over corn cut off the cob or corn from can/frozen. (www.fighterpilotinthekitchen.com)
Ingredients:
- 2 cups – cooked corn
- 1 cup – water
- 2 cups – buttermilk
- 8 ounces – plain full fat yogurt
- 1/2 cup – shredded mozzarella
- 2 tablespoons – full fat butter ghee
- garlic salt – to taste
- dash – cayenne pepper
In a sauce pan, over low heat, melt the ghee, add the corn and cook until tender or hot. Add remaining ingredients and bring to a slow boil over low heat.
