Corn Chowder or “Arepa Maiz Sopa”


This is great recipe for someone who has a taste for the flavor of an Arepa.  Either use left over corn cut off the cob or corn from can/frozen.  (


  • 2 cups – cooked corn
  • 1 cup – water
  • 2 cups – buttermilk
  • 8 ounces – plain full fat yogurt
  • 1/2 cup – shredded mozzarella
  • 2 tablespoons – full fat butter ghee
  • garlic salt – to taste
  • dash – cayenne pepper

In a sauce pan, over low heat, melt the ghee, add the corn and cook until tender or hot.  Add remaining ingredients and bring to a slow boil over low heat.
